A:
Perhaps they are not familiar with formal emails?
In the UK, we don't often write any formal messages, even at work. The culture is quite different.
If it's not casual, Dear Sirs is good, or you might address it to the board:
Dear Board Members,
What did the other person suggest?

The ‘it’ at the end is correct but unnecessary so I would drop it to make the email flow better
Also say ‘our interview which’
That is also right but which is more common and flows better
Good luck I hope it all goes well

A:
¡No uses el tesauro como esto! Many of these words are inappropriate for what you want to say.
transcribe = write down the words of a speech or a song
morsel = a small amount of food; a scrap that fell on the floor
transport = send someone or something using a vehicle like a boat or a truck
catechize = teach someone the basics of Christianity using a method of asking questions
Do not capitalize "We" unless you are God or a king.

It sounds a little more formal to write it without the "And". ^_^
