"My apologies" is just a fancier/more formal way of saying "I'm sorry".

The first one sounds unnatural.

The second one is a little more natural but “it only made her angry” means that she wasn’t angry in the first place.

If you were apologizing for something then she was already angry about whatever happened. So your apology made her angrier.

A: He demanded an apology. --> Sounds natural
He demanded apology. --> Does not sound natural

"the apology part" - the part of whatever they were doing that required apologizing. This could be rephrased as just "apologizing"

"a whole lot" - adjective that describes "easier". Easier < A lot easier < A whole lot easier

"That made apologizing much easier." is an easier sentence to understand and means basically the same thing.
