A: The meaning is the same but 'not much of a' just sounds a little less harsh than 'bad'
It's like the difference between 'bad' and 'not very good'

A: Interlocutor is RARELY said and just means someone who is talking in a conversation.
Conversationalist is said more often and means someone who enjoys/ is good at conversation.
You can say all of your sentences but they aren’t that common. most people would say:
I enjoy talking to you.
You are good at making conversation.
You’re a good talker.
You’re a good person to talk to.

A: You could also say "Actually, I'm not a very good conversationalist."

A: No but you can just say you are a conversationalist
