This is very controversial in the US. People who are more Conservative believe that political correctness prevents direct communication. People who are more liberal believe that it creates a more inclusive environment.

A: Yes, it's fine to use them in formal contexts. In some offices/work places it might be preferred, because it has become popular for companies to try and demonstrate that they aren't discriminating based on gender. More likely, people wouldn't mind either way, so you could use person or man.

There will of course be a few people who are super anti 'political correctness', who might get funny with you if you say person rather than man.

Basically, I'd say most people won't have strong feelings either way if you say "person" or "man". And there'll be some people who will prefer if you say one rather than the other.
