Q: stimulating 和 interesting 和 encouraging 和 intriguing 和 fascinating 的差別在哪裡?
A: You can find the definitions of all of these in the dictionary. That's clearly not what you want, though, so I will write down the first thing that comes to my mind without using a dictionary myself. This should hopefully give you "colloquial" definitions of the words!
I recommend looking in a dictionary too, anyway.

Interesting: a basic adjective to describe something that makes you want to look at/listen to/read/play with it.
"This is an interesting book".

Stimulating: something that makes you especially pay attention/think hard because it is so interesting. It comes from "to stimulate", which is to cause something to happen. Think of giving someone an electric shock - that's "simulating". But also, an intellectually challenging lecture would also be "stimulating" because it makes you think.
"That was a stimulating book". [It may have been a book on maths or philosophy.]

Encouraging: When something or someone makes you feel better able to do whatever you're trying to do.
"She gave me some encouraging words before the race." [e.g: "Good luck! You've trained very hard for this, I'm sure you'll do very well!]

Intriguing: Something that is interesting in a way that it makes you wonder what more there is. Perhaps it is hiding some detail or it is a puzzle. It always means that you must work something out to get more detail and this is interesting to you.
"That is an intriguing puzzle."
"The window is open. How intriguing."
"The title of that lecture is intriguing. I wonder what it's about?"

Fascinating: *Very* interesting.
