Adopt means to choose or take as your own by selection- After living in Japan for several years, I adopted several practices when I moved back home such as removing my shoes before entering the house.
Adapt means to adjust or modify fittingly- When you move to a new country, you eventually adapt (adjust) to that country’s culture the longer you live there.

“Adopt” means to take on or accept something. Adopt a child; adopt a position. “Adapt” means to adjust to something, to be flexible, to change: to adapt to a new life situation, for example; or to adapt one’s language to fit one’s audience.

adapt = change to meet a new purpose
Most people adopted Netflix and Amazon as their favorite way to watch movies. (= most people began using Netflix and Amazon)
The school adopted new anti-bullying rules this year. (= they began having new rules)
When her parents died, Agatha was adopted by her uncle and aunt. (= the uncle and aunt began to care for Agatha)
Hollywood companies were slow to adapt to the Internet, and now most people watch movies online with Netflix or Amazon. (= Hollywood companies were slow to change to meet the new purpose)
The school adapted its anti-bullying rules from a book the principal read. (= the school took the book and changed it into school rules)
It took awhile for Agatha to adapt to her new living situation. (= it took her a long time to change to be suitable for the new situation)

@MishaTr I somewhat agree! I think for ESL/EFL learners, this case would be more of a minimal pairs confusion...at least what I’ve seen with my students (: A student of mine also pointed out that one could adopt aspects of a new culture (& integrate it into their own) because they adapted to it from either consistent exposure near home or by living in a different country entirely.

@kkn827 yes: it’s certainly a minimal pair phonetically. And I can see there might be some contexts for overlap, like adApting to a new culture by adOpting certain practices.
