Example 1: Its cold outside, put a coat on.
Example 2: It might be cold outside so you may need a coat.
"It's cold" means that you Know for sure that it's cold. It "might be cold" means that you are unsure.

I think by using "maybe" the probability of being cold outside is higher than using might. "might" is used for the smallest probability of something to occur..

I would say that they are interchangeable. People will know exactly what you mean if you say "maybe" or "might be".
For example I would say these frequently:
"Maybe it's cold outside. I think I'll take a coat just in case."
Or
"I'll take a coat today. It might be cold out."
Both are very natural.
