This croissant isn't fresh and crispy anymore, it must have been made days ago.
Since croissants need to be baked to be made, you don't need to say "baked" as whoever you're speaking to will know that by "fresh" you mean "freshly made"

instead of saying fresh baked say freshly baked also you should add a it before not even crispy
