What is the polite way to tell a server that I'll go to a different restaurant?
In this situation :
I went to a restaurant. Many people are waiting for tables. The server told me that the wait will be long. Then, I decided to go to another restaurant.
Can I say that way: I'll pass this time?

One possibility: "Ok, thank you, but we're not interested in waiting. We'll come back some other time."

You can say something like "that's okay, we'll go somewhere else, thank you anyway". This way, you are acknowledging what the server has said (by saying "that's okay"), you're also telling them your reaction/motive and the action you will take ("we'll go somewhere else"), and you are also using your manners by thanking them, so you are more likely to get a positive reaction. Also if you feel too shy to tell the server that you're going to leave, just wait until they walk away and then leave without saying anything.

@starry-chan I personally do not feel that is a good way to handle it. Typically when customers are waiting, the staff will make a list in order of arrival time. If you just vanish, you will increase the wait of others later, as the server calls your name and waits to give you a chance to respond. (Is he in the bathroom? Outside for a quick smoke, etc.) Plus there is nothing to be shy about. The server will appreciate that you simplified their task.
