a couple of = two persons and things joined or related in some way.
That's the meaning of "a couple of" that I found, but why is it "two persons AND things joined .." ?
I think it should be "two persons OR things joined", because I don't think it would be accurate mix persons and things..I don't understand why it says "AND" instead of "OR".

Yes. It should be OR like you said .
In simpler terms, a "couple" is two of anything.
