My favorite animal is the dog, is more specific as in saying your favorite animal is a certain dog.
My favorite animal is a dog, is just saying that your favorite type of animal are dogs in general.

The “a dog” sentence specifically means that dogs are your favorite animal
The other sentence kinda doesn’t make sense in this context unless someone asks you “Hey Nobu, which one do you like more, the cat or the dog” and you’d say “the dog”
