“like” is a filler word many native speakers use. It doesn’t really have a meaning other than to maybe soften the tone of the sentence (in this case; in other cases it would not do that).
“I’ve just been, like, stuck in my apartment all day” = “I’ve just been stuck in my apartment all day”
