"But you know, there's so many people that I have to meet."
Why does the speaker say "there's" instead of "there are"?（The word "people "is plural.）

There are is technically correct. The reason some one would say there's or there is, is because it is easier to pronounce. Going from an "R" sound to another "R" sound is difficult for most people with an American accent. Two good examples of this are the words "Rural" and "Juror". So even though "There are" is the proper way to say it, many people will say "There's" to avoid stumbling over their words.

Some other examples were there are would be correct, but you would probably see there's:
"I like your idea of driving to Hawaii, but there's a lot of problems with your plan"
"I'll never be happy so long as there's still dogs out there I haven't pet"
"There's certainly better ways of getting my attention than punching my arm"

The speaker made a mistake. He should have said "there are".
