There isn't one. Ex sounds more casual. I would use former more.
You can use them interchangeably in all cases but ex-boyfriend or girlfriend. I have never heard "former boyfriend."

There is no difference.
After work he caught up with his former colleagues for some drinks.

I would use "former" as "ex-" tends to have negative connotations.

I agree with risikafox, "ex" for negative connotations like ex- husband or boy/girlfriend

It’s the same thing. Only a matter of style or preference on which one someone wants to use.

One of the main differences between ex-colleague and former colleague is the proximity. While ex-colleague refers to a person who has left your company or organization, former colleague refers to someone who was once employed with you but is no longer with you. The latter is more specific because it excludes individuals who are freelancers but still have a connection to your company.
There are some cases where both terms are used interchangeably, but there are others where only one term is used. For example, if a person has left your organization but still has a connection to your business, he or she might be described as ex-Colleague even though he or she doesn’t fit the description of “former colleague”. https://subwaysurf.io

A former colleague is someone who used to work with you but no longer does. Here you check this https://www.hamiltondemolition.co.nz/ and learn more new tips for a demolition company. The difference between ex-colleague and former colleagues is that the former implies that you both still have a relationship with each other, but no longer work for the same company or organization.
