2 sounds more formal than 1. In both it sounds like the cooking classes probably start at some point in the future.

3 sounds informal as well, but it sounds like the classes are already ongoing.

@Lee_96 Not apply. If you apply then that means they might turn you down, and say that you can't attend the classes. 1 and 2 just sound like the classes might start next month or in the spring.
