The holiday is called Thanksgiving (no "s"). People may say "Thanksgivings" but that is technically incorrect. "thanksgiving(s)" is an outdated English term that is similar to "praise".
"Happy Thanksgiving" is something you say to other people as a nice gesture, telling them to enjoy the holiday. It is used with other holidays like "Happy 4th of July", "Happy New Years", "Happy Halloween", etc.
