Generally, we use "I were" in conditional sentences to talk about things that aren't true and cannot be true, and their result. For example, I might say "if I were you, I wouldn't forgive him yet" to talk about what I would hypothetically do — I'm not actually you and I can't actually be you, obviously, but in a hypothetical situation, this is what I would do. Sometimes people will use "I was" in this situation, but it's most natural to say "I were".
If it's a normal sentence that isn't hypothetical, then you're always going to use "I was", so for example "I was at home", "I was going to ask for help", "I was told to wait here", etc.
In a conditional sentence about something that has already happened or been done (or something that is actually possible), you would use "I was", for example, "I'll find out if I was selected on Monday". This sentence is talking about a real event that isn't being imagined and could actually happen, so "if I were" is incorrect here.
