“Dear” is an affectionate way to talk to someone. “My dear friend”. There are other definitions of dear but we’ll keep it simple with this one definition.
“Esteemed” means highly respected. “The esteemed author”.
“Estimated” means something entirely different. This is a general educated guess as to how much or the qualities of something. “He estimated how many blankets were left in the room.”

Dear and esteemed can both mean that someone/something is admired, but they're used in different contexts and have different connotations. Dear is more for someone/something you love and that is close to you, while esteemed is more for someone/something that is highly respected.
Example sentences for dear:
1. My dear cat passed away last week.
2. My cat is very dear to me.
Example sentence for esteemed: Mr. John was highly esteemed for his contribution to science.
Estimated is a completely different thing, though. It's the verb "estimate" in the past tense, but it can also be used as an adjective meaning "approximate".
Example sentences for estimated:
1. I estimated the length to be about 5 inches.
2. The estimated cost of the house was $300,000.

@WRaziel “dear” is also a basic and safe way to start an email or a letter. you can use it with anyone.
Dear Professor Smith,
Dear Jane, etc.
esteemed is very formal and you would usually start a letter like “Dear esteemed _______” You could start a letter as “Esteemed Mr. Smith” but its very very formal.
