I’ll answer your question as best I can, but please read my note at the bottom!
Alter -
Definition: change in character and composition, usually in a small but comparatively significant way
Examples:
You can’t alter the past.
With one minor alteration we can fix the whole problem.
I’m just going to alter this word a bit, everything else seems fine.
Change -
Definition: make something different, alter or modify
Examples:
I’m going to change this word a bit, everything else seems fine.
You can’t change the past.
Focus on what you can change.
Modify -
Definition: make partial or minor changes to [sth.]
Examples:
I’m going to modify this word a bit.
I’d like to modify the rules, they don’t seem fair.
How they are different:
Alter - it sort of sounds historical/official to me. It’s used when talking about the past/future a lot. You might use it to talk about something not usually/supposed to be changed: “He altered the test results”.
Change - this word is very generic and can probably replace alter/modify whatever sentence their in.
Modify - it sounds technical/scientific to me. I might modify a car design so that it functions better. With a few modifications the machine will work flawlessly.
Take my answer with a grain of salt, I’m just one person and what works for me may not work for you! … but I feel like questions like these are actually not helpful 😬
I used to ask similar questions a lot and afterwards I felt I still didn’t really know what the words really meant. Sometimes it can definitely help to ask “what is the difference?” if two words are *really* similar, but for more than two words that all seem to have the same meaning, it can be more helpful to seek out examples rather than a difference. The reason is that there is no clear difference between words like these, at least not to native speakers. I think these questions are interesting but I’ve never thought of them this way, and so I think you shouldn’t either. Instead, it’s good to learn many examples of how each of these words are used, because even if I tell you “alter sounds more permanent than change and modify is used more often in science/formal settings,” that might not be 100% correct all of the time. Also, while definitions are helpful to get started with a word, only hearing it (and using it yourself!) many times will really help you understand. To that end, some good places to get examples:
Linguee - more official use cases (legal documents, etc), good translations offered
Reddit - if you just search the word and look for posts containing it sometimes you can get good results (of course reddit isn’t always full of wholesome content so be careful)
Dictionary.com - sometimes has useful example sentences
This app has a “show me examples” question that works pretty well, though I think sometimes it’s hard for people to come up with good ones off the top of their head.
Hopefully this helps and let me know if you have questions!

@Will_S

@Carole_Smaug (I hope it’s ok I answer in English I know very little French) that new learners often don’t know where to start is a really good point I didn’t think about. I would say that “change” is good in most instances. But I encourage you to search all three words and try to find them in context. I hope I was able to help and good luck with your learning!
