'I ' is a plural word. so in English we are using 'were' with plural words. but sometimes people using 'was' with' I' . why ?

Your example is a conditional sentence, type 2. For this type of sentence, the grammar is S1 + were/Ved, S2 would V. Hence the use of were there.

"I" is singular (not plural). I was. (simple past)

"if I were ..." is an "unreal conditional", in the "subjunctive mood", which is always "were".
