To dream of something implies a want, a need, a desire...
'they are dreaming of'... is not exactly wrong but the present continuous form 'dreaming' does not sufficiently convey the idea of 'they dream' as their hope is to land a secure job at sometime in the future .....
which has nothing to do with dreaming while asleep.
The things which are imagined, longed for, hoped for = they dream of ....

'dreaming of' - while asleep...
they are dreaming about being a millionaire
'dream of' (not while asleep) = conveys a wish or desire for smth [often unobtainable] ...
:)
