I think the first sentence is more correct but I'm trying to understand why you would use が. If "strawberries" is the topic of the first sentence, why isn't は used?

The second sentence is correct. は has many functions, and one of them is it's use in comparisons.
いちごは美味しいけど、レモンは美味しくない
This is simply the statement that "strawberries are good but lemons are not."
いちごが美味しい is noun clause that can be used in a number of ways. If you find such a statement on its own though, it means the subject of が is the only thing that fits the predicate of the sentence (or is the most exemplary of the predicate)
So essentially いちごが美味しい on it's own means that the strawberries are the most delicious:
(Compared to the other food that I could possibly be talking about)いちごが美味しいです
It is for this reason that you'll often see superlatives when が is used (to remove vagueness). いちごが一番美味しかったです
