I can see what you mean, but you absolutely must NOT substitute “like you know“ for, “as you know“
There are two reasons. Firstly, “as you know“ is the standard expression which everyone expects to hear when you are talking about things that you already know. Secondly, “like you know” Has another well-known meaning which will instantly confuse everybody if you say it in the wrong place. You must not do this. Use the proper tool for the right job – as you know.

He took like, you know, three hours to get ready.
The meaning and the situation is completely different, but the expression is so well known that it will confuse many people.
