Sky one - one doesn’t make sense here. Was it “sky was”?

I think there's a comma missing
... and the sky, one burning turquoise.

"One" used in that context, is like saying "a burning turquoise", but with a stronger emphasis, more like:
... and the sky, a particular burning turquoise.

“I thought of those baking days” - they were reminiscing their hot summer (baking) days on the east coast… when (at that time) the sea looked like pearl

And the sky looked like one burning turquoise (blue green mineral)
