Use "wish" to talk about things that are impossible, or things that probably will not happen:
I wish I could fly.
I wish there were more hours in the day.
Use "I hope" when there's a good chance that something might happen.
I hope this cake tastes good.
I hope we can still be friends.
The exception being "wish you.." or "wish them.." like We wish you a Merry Christmas or I wish them a pleasant trip.
