Besides being funny it also makes the character saying it seem very rustic. Very much from the country and not the city.

No, I don't think so. The dynamite is not representing a temper, fishing with dynamite is seen as something rednecks would do.

No. I don't know the context but it doesn't sound like she's saying anything about Sheldon. When she says "you" here she doesn't mean Sheldon specifically. She means it in the general sense.
She could also say:
One can only fish for so long before one has to throw a stick of dynamite in the water
It just means that if a person is doing something the right way then it isn't working then you need to just do what it takes, even if it might be drastic

I got it, I think. His mother(Mrs Cooper) may be suggesting by her reference to fishing that Sheldon should go apologising to his boss to get his job back even if it's a drastic way for him to do (apologise).
This is the one with subsequent lines.
