1- How do you refer to East Asian people (Chinese, Korean, or Japanese) both formally and informally?
We call them 'slant-eyed" or "almond-eyed" informally and they don't have negative meanings (just describing their eyes shape as different from ours).
I want to say:
"The slant-eyed people are leading the field in sports like table tennis and gymnastics."
2- What is the term for an eye-shape that is like Chinese people's?
"Her eyes are ...-shaped, like Chinese!"

I think anything involving their eyes can come off as offensive/racist. Generally, "Asian" refers to East Asians. In America, we don't really refer to Indian people or Persian people (for example) as Asian, despite obviously being from Asia. I know in England, they call Indian and Pakistani people Asian, but not in America.
For that sentence, I would say: "East Asians are leading the field in sports like table tennis and gymnastics."

People say slant-eyed in English, but it is generally considered offensive. It's best to just say Asian/Korean/Chinese or whatever.
You might be able to get away with saying "She looks Chinese," but she probably only looks Chinese..to Chinese...if she actually is Chinese! Otherwise people don't really like to be misidentified in general. That's my two cents (you may know that idiom).
