"I really don't like cucumber" -You don't like cucumber, likeee, you hate it
"I don't really like cucumber" -You're okay with eating it, but it's not your favorite

They mean about the same thing. "really don't like" is stronger than "don't really like"

"I really don't like cucumber" can be a little stronger because "really" is used first. It can be said in a tone like, "I REALLY DON'T like cucumber." You can also add more words to exaggerate how you feel about it. "I really really really reaaallly don't like cucumber."
As opposed to "I don't really like cucumber." If you use it the same way, "I don't really really reaaaally like cucumber" will create misunderstandings because "like" is used after "really."
"Really" exaggerates the next word, not the one before it, so it's good to be careful about what word you use after "really" to express your feelings.
"I REALLY DON'T like cucumber"
versus
"I don't REALLY LIKE cucumber."
