You can use either one - but when you say "in the next few years" it could mean that you will be doing it within the next few years and "in a few years " could mean that you will wait for a few more years until you try it. Hope that makes sense haha

They are pretty much the same. In the phrase "in a few years" the "next" is implied.
You can use both :)
