apologize is just like sorry but in a sincere way and excuse me is respect if you want to go to the restroom or pass through people you know/dont know.

When you say "I apologize," your feeling of remorse is either more formal or more sincere than that expressed by "Excuse me."

Both mean "sorry" but are a bit different
I apologize - more formal/sincere like for example "I apologize for my mistake"
Excuse me - can be said when offended or asking that your behavior be excused (often said when passing people on street, when asking someone to repeat something, after coughing and stuff)

"Excuse me" and "I apologize" can be used interchangeably in some cases.
"Excuse me for bumping into you"

Both work!
"Excuse me" is specifically apologizing for causing an inconvenience for someone else, but is not a direct apology in any other sense.
At a restaurant you may say: "Excuse me, I'd like to place an order please!"
but you would not say: "I apologize, I'd like to place an order please"
On the other hand:
"I apologize" is a more general apology, but usually quite polite, as opposed to the more casual "I'm sorry", and would sound awkward if used in any casual social setting. You would likely use it in a work environment, or another professional setting. Going back to the restaurant scenario, your waiter might say: "I apologize for the wait, your food will be right out."
