Both mean the same thing, but the first one sounds unnatural.
You should probably use the second one :)

They both mean to ask "there are so many days in my life, why did (whatever it is) have to happen today?"
But you wouldn't say "in all days" like the first one because it doesn't make it clear that it happened today, but could be implying that it happened on every day.
"Out of all days" in the second one tells you that in a choice of all the days of your life, the thing that happened chose to occur today, not any other day.
