That's all for today and Let's call it a day are extremely similar, and basically mean the same thing. So much for today is more sarcastic, and you'd use it if the day didn't go the way you wanted it to.
If you're out fishing and you've finished after catching a lot of fish, you could say That's all for today and Let's call it a day
If you went fishing and didn't catch many fish, or any fish at all, you'd say So much for today.

that's all for today or let's call it a day mean you have finished a task for that day and you won't be doing that task for the rest of the day,
so much for today means you're disappointed with how the day turned out or it didn't go how you planned, you would say so much for today to express that

If a teacher said "So much for today" at the end of class, does it mean the class or the students in the class wouldn't be good?

@TonyYan Yeah, it would be a little unprofessional if a teacher said that, but if they did it would mean they weren't pleased with how the class went

Just a side note, it doesn't ALWAYS have a negative meaning, but that's highly contextual and mostly always means something negative
