In ancient times, people would feast one last time, eat richer food and disguise on Mardi Gras ("Fat Tuesday"), before the period of Lent ("Carême" in French), when they had to eat less for 40 days until Easter.
To my knowledge, there is no particular saying for that day, but in some French regions, there might be one.

In Switzerland, we've never celebrated Mardi Gras, even in the french speaking region. I think they (used to ?) do in Belgium, though
