Forgive me if I am mistaken, but I think the phrase 'you could be forgiven for taking her for an assistant' seems, at first glance the person thought she was the assistant. (Rather than not.) But looking a second time he felt like she was too pretty to be an assistant. (if that's even a thing...)
Taking her=assuming that.
For assistant=she's an assistant.
But yes, it will depend on the context.
I am guessing she's not the assistant though

I'm not compeltely sure without context, but it means that at first glance, you wouldn't guess that she's an assistant. It's only after a second look that it's revealed how pretty she is. "You could be forgiven" in this case means that it's not a bad thing that you thought otherwise at first, as it wasn't obvious.
